Enchiladas Worth Stealing
*From the kitchen of Lisa Brooks*
1 lb. ground beef
1/2 c. chopped onion
1 can enchilada sauce (mild)
1 small can tomato sauce
1 pkg. flour tortillas
1 stick/pkg. shredded cheddar cheese
1 stick/pkg. shredded monterey jack cheese
Brown ground beef and chopped onion together in skillet. Drain off grease. Mix enchilada and tomato sauces together in a bowl. Pour 1/2 sauce mixture into ground beef and simmer for 10-15 minutes. Heat package of tortilla shells in microwave, until warm. Mix grated cheeses together. Fill warm shells with meat mixture. Sprinkle with cheeses and roll into enchilada. Place in 9x12 pan. After all shells are filled and rolled, top with remaining sauce. Be sure to completely cover shells, then top with remaining cheese. Bake in 350 degree oven for 20-30 minutes. Serve with desired toppings.
This sounds like a great recipe, thanks for sharing!
ReplyDeleteI agree, her enchiladas are the best--but only if accompanied by Brooks and Dunn salsa!!! Are you ready??? The room looks great!
